Canada's Top Chef competitor Xavier Lacaze puts together a fresh, and simple menu inspired by his childhood in Gascony, France. Au menu:

Heirloom tomato gazpacho

Pan-sear snapper with fennel purée

Stuffed boneless quail with wild mushroom and pea fricassée

Rhubarb croustade with yogurt thyme ice cream and cognac. This is a 4 course interactive dinner with wine pairing.
