Fresh Fig & Almond Frangipane

Ingredients

40 g.butter, soft
90 g sugar
1 tsp pure vanilla extract
60 g flour
3 Yolk
3 Egg
150 g ground almond (almond flour)
6-8 fresh figs, wedged

 Method

  1. Preheat the oven to 375F.

  2. In a bowl of an electric mixer or food processor combine the soft butter with the sugar and the vanilla. Mix for a minute on low speed to a creamy consistency. Add the flour, a little at a time until just absorbed.

  3. Add the 3 yolks and mix to a smooth consistency. Add 1/3 of thr ground almond, then one egg. Then another 1/3 of ground almond with the second egg, then finally the last 1/3 with the last egg. Do not overmix.

  4. Coat a 10-12 inch diam. baking dish with some melted butter and dust with a little sugar. Shake off the excess sugar.

  5. Fill the baking dish with the frangipane mixture and arrange the figs on the top, pushing them down slightly into the batter.

  6. Place the dish into a baking pan 1/3 of the way filled with hot water and place into a preheated oven for about 20 minutes or until the top of the frangipane is golden brown and firm to the touch.

  7. Remove and sprinkle with a few sliced almonds (optional).

  8. Allow to cool for few minutes before serving.
