Wilted Spinach Recipe

Wilted Spinach – Serves 2

You will need:

1 tbsp. butter

1tbsp. olive oil

½ red onion, finely diced

1-2 cup spinach

TT salt and black pepper

Method:

  1. Dice the red onion.

  2. Heat up the olive oil and butter in a frying pan or a small soup pot on medium heat.

  3. When the butter just starts foaming, add the red onion with salt and pepper.

  4. Cook on gentle heat until onion is just soft then add the spinach with a little pinch of salt.

  5. Using a pair of tongs, wilt the spinach by bringing the leaves from the bottom of the pot to the top and keep mixing this way, on gentle heat, until spinach is just soft. Remove immediately and transfer to serving plates. Do not overcook.
