Roasted Brussel sprouts with spicy pecans & apples
Serve 8-10ppl
500g brussels sprout
1 tbsp butter
¼ tsp fine sea salt
¼ tsp cracked black pepper
½ cup pecan, cut into large pieces
1/8 tsp chili flakes
¼ tsp mace
1 pinch ground clove
1 apple (such as Gala or Granny smith)
1 tbsp maple syrup
¼ lemon, zested
Preparing the Brussel sprouts
1. Preheat oven to 375°F.
2. Clean the Brussel sprouts by trimming the base with a small knife and removing any dry & bruised leaves from the outer layer.
3. Using a small knife, cut the Brussel sprout in half.

4. In an ovenproof frying pan, melted the butter and add the sprouts. Add the fine salt & cracked black pepper and toss well.
5. Allow to cook on medium heat for a few minutes, tossing regularly, until starting to get a little color. Add the diced apple and cook for another 2 minutes or until the apple get a little color.
6. Add the pecan pieces with the chili flakes, mace and clove, toss well and place into the oven for about 5 minutes.
7. Remove and mix again, then place back into the oven for another 4-6 minutes or nicely golden brown.
8. Remove and toss in the maple syrup and place the pan back one last time into the oven for couple of minutes or until everything is nicely glazed.
9. Remove from the oven and add the lemon zest before serving.
